All you need are the following:

3 tablespoons butter or 1/4 cup olive oil

1 onion finely chopped

1/2 teaspoon ground ginger

2 teaspoons curry powder or curry paste

3 tablespoons flour

3/4 teaspoon salt to taste

3/4 teaspoon sugar

1 cup chicken broth

1 cup milk or coconut milk (if desired)

2 cups cooked chicken, diced

1/2 teaspoon lemon juice

3-4 cups cooked rice

Boil chicken in 2 cups water. When cooked, dice chicken and put aside chicken broth to be used later. When using olive oil, heat oil in a large skillet or if butter is used, Melt butter over low heat in a heavy bottomed saucepan. Saute onion, ground ginger and curry powder in melted butter or hot oil for 2 minutes to bring out flavors in curry powder or curry paste and aromatics. Blend in flour, salt and sugar.

Cook over low heat until mixture is smooth. Remove saucepan from heat and whisk in chicken broth and milk or coconut milk. Bring mixture to a boil, stirring constantly. Make sure that you stir because curry powder burn easily. Boil for 1 minute until sauce reduces. Add chicken and lemon juice. Warm the chicken. Put Chicken Curry over the cooked rice and serve with accompaniments on the side so everyone can top as desired.

You can top it with mango Chutney, chopped hard boiled eggs or bacon bits.

You can also use the same recipe when cooking beef curry, pork curry or seafood curry. Just make sure to pre-cook your meats and seafood before cooking the dish.
