How to Thicken Your Sweet Potato Soufflé

Ingredients:

For the Soufflé

1/2 cup butter (1 stick), at room temperature, plus for the pan
5 medium sweet potatoes
2 large eggs
1 cup granulated sugar
1 1/2 teaspoons vanilla extract
1/2 cup milk
Pinch of salt

For the Topping:

1 cup finely chopped pecans
1 cup brown sugar, packed
1/2 cup all-purpose flour
1/4 cup butter (1/2 stick), softened

Recipe on Sweet Potato Soufflé

Step one: Preheat the oven to 350 degrees Fahrenheit. Make sure to grease a 2 1/2-quart baking dish with butter.

Step Two: Poke the sweet potatoes with a fork and bake on a foil-covered baking sheet until they are soft, 1 hour. When cool enough to handle, peel the potatoes, place the flesh in a large mixing bowl, and mash until very smooth.

Step Three: Add the eggs, sugar, butter, vanilla, milk, and salt. Combine well with an electric mixer or hand mixer. Turn the mixture into the baking dish.

Step Four: (For the toppings) In a medium bowl, stir together the pecans, brown sugar, flour, and butter until thoroughly combined. Spoon the mixture over the sweet potatoes, making an even layer.

Step Five: Bake the sweet potato soufflé until slightly browned, 40 minutes. Let it sit for 5 minutes before serving.

Tips for a Thicker Soufflé

Here are a few ways to avoid having your souffléa little too watery!

First, take a few ladles of the liquid out and mix it with cornstarch until it’s fully incorporated. Add that back to your soufflé and mix gently, but thoroughly.

Whisk together equal parts cornstarch and cold water in a small bowl. Use one tablespoon of cornstarch per cup of liquid you would like to thicken. Stir out all the lumps. A few minutes before your casserole is done, add it a little at a time until you are happy with the thickness.

Another alternative is to add very finely diced potato at the outset, as these contain a fair amount of starch (it varies between varieties) and this will aid thickening.

Finally, mix a knob of butter with some ap flour or cornflour on a chopping board and ensure the paste is mixed thoroughly.
