Take:

  • 24 quality prunes

  • 24 blanched almonds

  • Extra virgin oil

  • 12 rashers of higher-welfare smoked bacon

Destone the prunes and make a small incision on each. Next, season the almonds with salt and drizzle some oil on them, then stuff them in the prunes. Halve the rashers of bacon across the middle and gently wrap a stuffed prune in each. Preheat the oven to 195 degrees and cook the bacon rashers with the prunes for approximately 15 minutes.

3. Creamy polenta with garlic and basil butter

This elegant dinner recipe is going to make your guests go nuts! All you need are the following ingredients:

  • A bulb of garlic

  • Olive oil

  • 200 ml milk

  • 200 g of polenta

  • Fresh basil

  • 125g of butter

  • Parmesan cheese

Preheat your oven to 200 degrees. Peel away all, but one of the papery leaves of the garlic bulb, then slice off the top centimeter to obtain the cross-section of the cloves.

After placing garlic on a sheet of tin foil, drizzle oil on it. Wrap it up, pop in a baking tray and roast in the oven for twenty-five minutes. Meanwhile, pour milk into a large, heavy pan along with 800ml of water, in addition to 1 teaspoon of sea salt and bring to boil.

Pour in the polenta in a thin stream, whisking it all the while. Turn down the heat to the lowest and let it cook for half an hour, stirring every five minutes. Next, melt the butter and blend half of it with fresh basil. Squeeze all of the garlic cloves out of their skins and add them to basil along with a generous grating of nutmeg. Blitz to a vibrant green butter and transfer it into a small pan.
Cook it for five more minutes at low heat and then set it aside. When the polenta is ready, grate the cheese and stir in the remaining butter.

Serve immediately with the basil butter served on the top.
