All you need to make this sumptuous and healthy pizza are the following simple ingredients:
For the dough
200g strong while flour plus a little more for dusting
½ tsp of yeast
¼ tsp of caster sugar
Oil for greasing
For the topping
4 tbsp olive oil
1 garlic clove, sliced
200g of passata
1 small aubergine sliced into chunks
100g ricotta
A handful of mint
Put all the ingredients if dough into a large ball, add a pinch of salt and some warm water. Mix well to obtain a soft dough then knead for 5 minutes. Cover with cling film and leave it aside until the dough has
doubled in size.
Meanwhile, prepare the sauce. Simmer garlic in one tablespoon of olive oil on medium heat. Add the passata. Season well and let it cook for 8 to 10 minutes, add in sugar if the mixture tastes too tart. When the dough has risen, roll it into a pizza base as large as your frying pan.
Leave it on your working counter for 15 more minutes. Slice the aubergines and stir fry them in one tablespoon of oil until golden brown. Now brush oil on your frying pan and transfer the pizza base into. Let it cook for 5 to 6 minutes and then flip it very gently. It should have a golden brown color. Now add the sauce, fried aubergines, olives, mint, and cheese. Cook for about 5 minutes and serve hot.
Sizzling spaghetti
What you need:
Extra virgin olive oil
Diced chicken
Garlic
Salt
Pepper (black)
Soy sauce
Spaghetti
Cabbage

In a pot, add 300ml of water along with a tablespoon of extra virgin olive oil. When the water starts to boil, add in the spaghetti and allow the spaghetti to cook for 10 minutes. Now filter your spaghetti and
rinse it under cold water. Set it aside. In a frying pan, add a tablespoon of olive oil. Add a teaspoon of crushed garlic and stir fry it until medium brown. Now add small chunks of chicken and let them cook with the garlic for 10 minutes. Now add soy sauce and a few drops of vinegar.
Next add a pinch of salt and pepper and the diced capsicum, carrots and cabbage. Stir fry the vegetables. Now mix the spaghetti with this mixture and serve hot.
